  • 1 Roma tomato, diced

  • ⅓ cup guacamole, homemade or store-bought

  • ¼ cup diced red onion

  • 1 jalapeno, thinly sliced

  • 2 tablespoons chopped fresh cilantro leaves

 

Instructions

  1. Begin by preheating your oven to 425°F (220°C) and lightly greasing a baking sheet or applying a nonstick spray.
  2. Arrange the cauliflower florets in a single layer on the prepared baking sheet. Drizzle with olive oil, then add garlic, cumin, chili powder, and paprika. Season to taste with salt and pepper, and gently mix everything together. Place the baking sheet in the oven and bake for 12-14 minutes, or until the cauliflower is tender and has a golden brown color.
  3. Next, spread tortilla chips evenly over the cauliflower. Layer black beans and cheese on top.
  4. Return the baking sheet to the oven and bake until the dish is warmed through and the cheese has melted, approximately 5-6 minutes.

  3. Evenly distribute the cream cheese among the jalapeño halves, filling each one. Halve the bacon slices and wrap each jalapeño half snugly with a piece of bacon.
  4. Arrange the bacon-wrapped jalapeños on the wire rack placed over the baking sheet. Bake for 20-25 minutes or until the bacon is as crispy as desired.
